Ok, so it is Stove Tuesday, and my favourite type of Pancake, Drop Pancakes. They are a little thicker than the usual ones, and very quick. Remember, I am older, so traditional measurements. They work for me.
8 oz. plain flour
Salt
1/2 level teaspoonful bicarbonate of soda
1 level teaspoonful cream of tartar
1 egg
about 1/2 pint of milk
1 tablespoonful of sugar
sufficient to make about 30 pancakes
Method
Shift together the flour, salt, bicarbonate of soda and cream of tartar, make into a well in the centre, drop in the egg and a little of the milk. Mix with a wooden spoon, adding more milk as necessary to make a thick batter. Add the sugar. Heat the gridle on the hotplate and grease it lightly with butter of Margarine. Pour in a dessertful of the batter on the gridle at successive intervals, and when the bubbles rise to the surface, turn the pancakes to brown the other side.
Take care not to get the gridle too hot or the outside of the pancakes will brown before the inside is cooked.
Serve hot with Butter, margarine, jam, or whatever desired topping
